Vanilla-Lemon Summer Kiss Melon "Butter"
In the fall and winter months, we love warmly spiced apple butters and pumpkin butters. So why not a bright, fresh melon butter in the summer?
This easy-to-make "butter" is wonderfully creamy and full of flavors. It's divine spread on toast, bagels and croissants. And it's even an unexpected, deliciously sweet addition to chicken, pasta and rice dishes.
Vanilla-Lemon Summer Kiss Melon "Butter" Recipe:

7 cups Summer Kiss melon, cut into large chunks (about 1/2 of a melon)
1 tablespoon lemon zest
2 teaspoons lemon juice
2 teaspoons vanilla extract
1/3 cup granulated sugar
1. Add the melon to a food processor fitted with the blade attachment and blend until it's as smooth as possible, at least 30 seconds.
2. Pour the melon purée into a medium-sized sauce pot, and mix in the lemon zest, lemon juice, vanilla and sugar.
3. Place the pot over medium-high heat. Once it starts bubbling, turn the heat to low and simmer, uncovered, until it's thick. This should take about 2 hours. (Check on it every now and then -- it should be simmering gently. If it's too strong a simmer on the lowest heat, move the pot a bit to one side, and then switch sides about halfway through the cooking process. This is important because it can brown or burn with too much heat.)
4. Let the "butter" cool to room temperature before refrigerating.
