Sugar Kiss Melon Lemonade Ice Cube Recipe
Makes about 2 dozen (1/2-ounce) ice cubes
Prep Time: 10 minutes
Freezing Time: overnight
1 cup Sugar Kiss Melon, cut into large chunks
1/4 cup freshly squeezed lemon juice
1-1/2 teaspoons granulated sugar
1. Add the melon, lemon juice and sugar to a blender and pulse until it's a smooth mixture.
2. Fill each opening in an ice cube tray with 1/2-ounce squares. They should be filled exactly to the top surface of the tray. (If the liquid goes above the edge, they won't be quite as pretty.)
3. Freeze the trays overnight, and gently pop out the cubes when you're ready to use them.
I love the look of these small, square cubes, but you can use any size ice-cube tray you'd like to. (Simply measure how much liquid your tray can hold and adjust the recipe accordingly.)
