Grilled Summer Kiss Melon Fries with Yogurt Chipotle-Agave Dip

 

I love adding the smoky, char flavor from the grill to sweet foods.  It's always a lovely combination.

 

In the summer months, we see grilled stone fruits, grilled mango, and even grilled avocado on menus.  So of course, I had to try grilling a Summer Kiss melon.  And it turned out to be and explosion of flavor!

 

And what's better than a slice of sweet, smoky melon?  A slice of sweet, smoky melon dipped into a cool, spicy dip -- that's what.  And it makes for a lovely, unique summer appetizer.

 

Grilled Summer Kiss Melon Fries with Yogurt Chipotle-Agave Dip Recipe:

 

Serves 6

Prep Time: 20 minutes

 

For the dip:

1/4 cup plus 2 tablespoons plain yogurt

2 teaspoons finely chopped chipotle peppers in adobo sauce

2 teaspoons agave nectar

For the melon:

About 2/3 of a whole Summer Kiss melon 

1-1/2 tablespoons grapeseed oil

Freshly ground black pepper

 

For the dip:

1.  In a small bowl, combine the yogurt with the chipotles and agave.  Mix until smooth, and set aside.

 

For the melon:

2.  Line a baking sheet with 2 layers of paper towels.  Cut the melon into slices 1/4 to 1/2-inch thick and 3 to 4-inches long, placing them on the towel-lined baking sheet as you go.  Then lay two paper towels on top -- gently press on the towel to absorb any excess moisture.  

 

3.  Preheat a stove-top or outdoor grill.  

 

3.  Add the melon slices to a large mixing bowl, very carefully toss them with the oil, and a generous amount of freshly ground black pepper. 

 

4.  Once the grill is very hot, add as many melon slices as you can, with a couple of inches of space between them.   If you don't hear a sizzling sound, it's not hot enough. Wait until you hear the sizzle! 

 

5.  Remove the melon slices when the bottom surface is nicely marked from the grill, about 1 minute.  Do not grill the other side -- if you do, they will become too soft. (It depends on the size of your grill as to how many times you'll have to add more melon.) 

 

6.  Serve the melon "fries" as soon as they are grilled, with the yogurt chipotle-agave dip.

You can also grill large slices of the melon and serve them as a side dish.
