Golden Kiss Melon-Lime Preserves

Cooking this melon, very slowly, for a long period of time, transforms fresh, juicy bites into a unexpected sweet, candy-like treat. Adding citrus to the preserves lightens and brightens the flavor. It's delectable!

Golden Kiss Melon-Lime Preserves Recipe:
Makes about 2 cups
Prep Time: 10 minutes
Cook Time: 1 hour, 20 minutes
Total Time: 1 hour, 30 minutes
Active Work Time: 10 minutes
4 cups Golden Kiss melon, cut into a small dice -- about 1/4-inch cubes (from about 1/2 of a melon)
Zest of 1 medium-large lime
Juice of 1 medium-large lime
1/3 cup granulated sugar
1. Add all of the ingredients to a medium-sized sauce pot, and mix to combine.
2. Place the pot over medium-high heat. Once it starts bubbling, turn the heat to low and simmer, uncovered until it's thick, and the melon is bright orange, about 1 hour, 20 minutes. (Check on the preserves every now and then -- it should be simmering gently. If it's to strong a simmer on the lowest heat, move the pot a bit to one side, and then switch sides about halfway through the cooking process. This is important because it can brown or burn with too much heat.)
