Golden Kiss Melon Asian-Style Slaw
You might not expect to find crisp, sweet melon in a slaw -- but here, it shines as the star ingredient. And the Golden Kiss is a perfect choice, as it's firm enough to add a bit of a crunch, and is a delicious balance with the spices in the dressing.
This beautiful, sweet and spicy melon slaw would be delicious beneath grilled steak, chicken or fish, on the buffet at a barbecue, as a lovely vegan dish, and of course, it's perfect for a picnic.
Golden Kiss Melon Asian-Style Slaw Recipe
Serves 4 to 6 as a side
Total Prep Time: 20 minutes
6 cups loosely packed, shredded green cabbage
1-1/4 cup thinly sliced red bell pepper
4 finely chopped scallions, white and green portions
1/4 cup thinly sliced, fresh basil
2 cups Golden Kiss Melon, cut into matchstick-sized pieces
1/4 cup fresh orange juice
2 tablespoons rice vinegar
1/2 teaspoon chile paste (I like Sambal Oelek)
1/2 teaspoon sea salt
1/2 teaspoon freshly grond black pepper
1-1/2 teaspoons granulated sugar
1 tablespoon sesame oil
1 tablespoon toasted, black sesame seeds
1. In a large mixing or serving bowl, combine the cabbage, red peppers, scallions, basil and melon. Set aside.
2. In a small bowl, whisk the orange juice with the vinegar, chile paste, salt, pepper, and sugar. Then gradually whisk in the oil.
3. Just before you're ready to serve, toss the slaw with the dressing and toasted sesame seeds.
