Golden Kiss Melon Arugula Salad with Blue Cheese and Honey Spiced Pecans


After I eat something spicy, I crave something sweet.  And after I eat something sweet I crave something salty.

So what's my favorite combination?  Spicy, sweet and salty all in one, of course!

This is exactly why juicy chunks of Golden Kiss melon are so stellar in this salad.  Every bite of melon perfectly balances the spiced nuts, the peppery arugula and the saltiness in the delicious blue cheese.  

This makes for a lovely side salad or can hold its own as a main course salad.   


Golden Kiss Melon Arugula Salad Recipe with Blue Cheese and Honey Spiced Pecans:


Serves 4

Prep Time: 20 minutes


For the pecans:

1/2 cup pecan pieces

2 teaspoons honey

1/4 teaspoon sea salt

1/8 teaspoon cayenne pepper

For the Dressing:

1-1/2 tablespoons Golden Kiss melon juice (see instruction no. 2 below)

1-1/2 tablespoons lemon juice

1/2 teaspoon honey

1/4 teaspoon sea salt

2-1/2 tablespoons extra virgin olive oil

For the Salad:

7-1/2 cups loosely packed arugula (about 3-1/2-ounces)

2 cups cubed Golden Kiss melon (about 1/3 to 1/2 of a melon)

1/2 cup crumbled blue cheese

1/2 cup dried cranberries

Freshly ground black pepper.


For the pecans: 

1.  Preheat the oven to 375 degrees F.  In a small bowl, combine the pecan pieces with the honey, salt and cayenne.  Make sure all of the nuts are coated evenly.  Spread them in one layer on a baking sheet and and place them in the preheated oven until they are very aromatic and darker in color, about 8 minutes. Set aside.


2.  To get the melon juice, either use a spoon in the center of the melon to collect some after you've removed the seeds -- or -- chop a bit of the melon super finely and it will become juice. Set aside.


For the dressing:

3.   In a small bowl, mix the melon juice, lemon juice, salt and honey together.   Then gradually add the oil, constantly whisking until it's well blended. Set aside.


4.  In a large serving bowl, gently combine the arugula, cubed melon, blue cheese, dried cranberries, and honey spiced pecans.  Then evenly pour the dressing and several turns of freshly ground black pepper over the salad.  


5.  Toss and serve!
