Cardamom Spiced Golden Kiss Melon Granola Parafait


How many times have you heard that breakfast is the most important meal of the day?  I'm guessing: lots!  So why not make it as special as any other meal?


My favorite breakfast includes yogurt, granola and fresh fruit.  It's a delicious way to start the day.  Layering these three foods brilliantly brings together a wonderful combination of flavors and textures.  In this case, the Golden Kiss Melon is the star.  While there are ample bites of the firm, sweet melon, its juice also flavors the yogurt.  


And good news:  this breakfast can easily double as dessert!


Cardamom Spiced Golden Kiss Melon Granola Parafait Recipe:

Serves 4 to 8

Prep Time: 30 minutes


2 cups Golden Kiss melon, cut into a small dice (about 1/2 of a melon)

For the granola:

1 egg white

1/4 cup dark brown sugar

1 tablespoon honey

2 teaspoons vanilla extract

1/2 teaspoon ground cardamom

1/4 teaspoon sea salt

1-1/4 cup oats

1/4 cup sliced almonds

For the yogurt:

1 cup plain Greek-style yogurt

1/4 teaspoon ground cardamom

1/2 teaspoon vanilla extract

1 tablespoon Golden Kiss melon juice (see instruction no. 6  below)

2 tablespoons honey


For the granola:

1.  Preheat the oven to 375 degrees F.  


2.  In a large mixing bowl, use a whisk to blend the egg white with the sugar, honey, vanilla, cardamom and salt.  


3.  Fold in the oats and almonds, and then pour this mixture onto a baking sheet. Use a spoon to create an even layer.  


4.  Place the baking sheet in the preheated oven and roast until the granola is golden brown, about 15 minutes.  


5.  Remove from the oven and let the granola cool on the baking sheet for at least 15 minutes.  (The granola will stick to the baking sheet in some areas -- use a flat-bottomed, metal spatula to scrape it off.  I find that the granola doesn't crisp as well if I use parchment paper or foil.)


 For the yogurt: 

6.  First get the melon juice by either using a spoon in the center of the melon to collect some after you've removed the seeds -- or -- chop a bit of the melon super finely and it will become juice.  Add the juice along with all of the yogurt ingredients to a small mixing bowl and combine.


7.  In 4 (8-ounce), or 8 (4-ounce) glasses layer granola, yogurt and melon. (The size you choose all depends on if you'd like to serve small or large portions.)  Starting with the granola, equally distribute it among the glasses.  Then equally distribute the yogurt between the glasses, on top of the granola.  Now divide the melon amongst the glasses, on top of the yogurt.   Then repeat this layering process once more.


8.  Serve immediately.  


Recipe Note:


You can prepare the melon, granola, and yogurt ahead -- however, wait as close to serving time as possible to layer the components in the glasses.
